VARIETALS: Cabernet Sauvignon & Cabernet Cortis

STYLE: Blanc de Noir (white from red)

VINEYARD: On highest hill of the region, the Kloppberg, 12 miles from the Rhine river; soils are marly limestone and loess

CLIMATE: Long, dry, maturation period with large fluctuations between day and night temperatures; microclimate leads to fresh, elegant and highly aromatic grapes

FARMING PRACTICES: Biodynamic (certified by Demeter); no chemicals used (pesticides, fertilizers, additives, etc); dry farmed; rows grassed over; grapes hand harvested

VINIFICATION: Certified vegan winemaking; spontaneous fermentation with native yeasts; no fining; aged on the lees until bottling; sulfites ≤30ml/L

TASTING NOTES: Pale onion skin yellow color, with a gentle blush of rosé. Aromas of ripe raspberry and gooseberry. Pleasantly dry, crisp and fresh.

FOOD PAIRINGS: Salads with avocado and shrimp, grilled or cooked fish, and bouillabaisse, or enjoy as an aperitif
