Carlos Ferreiro Cabello is the winemaker at Dominio de Heredia. Carlos has degrees in Chemistry and Biology from the University of Rioja and, until a few years ago, was a professional soccer player in Spain. Carlos has been with the winery since its inception in 2002. Today he is the main winemaker at Dominio de Heredia.
The winery has 120 Has (300acres) planted with Tempranillo around Fuenmayor, in the center of Rioja Alta. Tempranillo is the only varietal planted in the Estate. Yields are kept low, well below the 6500 kg/Ha limit in Rioja. All grapes are handpicked in small cases and quickly taken to the winery.
Fermentation takes place in stainless steel tanks at a controlled temperature of 82F for at least 15 days, plus at least another 15 days of maceration. Only native yeasts are used. The wine is only slightly filtered before being bottled.
