About Bodegas Baigorri
In Samaniego, near Laguardia, Basque architect Iñaki Aspiazu Iza built the Bodegas Baigorri winery into the natural slope of a hill, creating one of the most impressive and unique wineries in the world. Standing on the viewing platform inside, looking down over this unique winery is an amazing experience. The five stories are without partitions, creating a large open space where all the work is done by gravity.
Bodegas Baigorri takes as much pride in their vineyards as they do in their iconic winery. They farm organically and the grapes are hand harvested into small containers.
There is not a single pump in the winery. After a carefully selecting the grapes on a sorting table, they fall into special containers that deposit them in small, custom-made conical fermentation tanks. Fermentation is done with native yeasts and no winemaking additives are used. Stirring is also done by gravity. The winery uses only French oak. The wines are minimally fined or filtered and sulfite levels are below 70 mg/L.
