VARIETALS: 85% Rufete, 15% Tempranillo
VINEYARDS: 3 plots: one at 2,625 feet, two at 2,300 with over 70 year old vines. Granitic soils.
FARMING PRACTICES: Organically grown, dry farmed, planted narrow framework on terraces. Hand harvested into 22 pound boxes.
VINIFICATION: Careful de-stemming and selection. Spontaneous fermentation with indigenous yeasts, malolactic fermentation in stainless steel tanks. All movement of grapes, must and wine done by gravity. Minimally fined or filtered. Sulfites ≤50 mg/L. 3,000 cases produced.
AGING: Six months in French oak
TASTING NOTES: Cherry red with a purple rim in the glass. Aromas of ripe red fruit, with herbal and balsamic notes. Ripe red fruits continue on the full bodied palate with added flavors of licorice, spice and herbs. Fresh with good minerality, acidity and a long, satisfying finish.
