About CHAMPAGNE DURDON BOUVAL:
We have a small family estate in Vincennes, in the heart of the Vallée de la Marne. Our vineyards are on mountainsides facing south and southeast, where they get maximum sunlight. We make our Champagne out of Chardonnay, Pinot Noir, and Pinot Meunier. We plant our Chardonnay at the top of the hillsides, where the sun is strongest and the soil is most full of minerals. Our Pinot Noir and Pinot Meunier are planted lower down in the valley.
We have been farming organically since 2009 and, in 2017, decided to convert to biodynamic agriculture. Our wines have been certified as organic under the strict EU standards since 2017. Our grapes are harvested by hand into small cases and we ferment our wines without added yeast - we use only the native yeast. We use gravity, not machinery, to process the wines. We find that these processes give the wines a fresh, natural taste and liveliness that we value.
We produce only 950 cases of wine per year because we want to make sure that all of our wine is what we want it to be.
