VINEYARD: In the family for generations, 'La Chassière' is a 1 Ha plot with sandy soils, which hold a higher temperature, producing rounder, more concentrated wines; ideal eastern exposure.
FARMING: Biodynamic, certified by Demeter; no chemicals used; rows grassed over; natural fertilizers (green manure) and treatments of the vines (infusions of nettle, chamomile, etc); hand-harvest into small crates with severe sorting in the vineyard.
WINEMAKING: Spontaneous fermentation with native yeasts; grapes partially destemmed; bottled by hand, with gravity.
AGING: 12 months in 10% new Burgundian barrels from the forest of Fontainebleau, followed by 6 months in small stainless steel vats to blend different barrels
TASTING NOTES: Beautiful, bright ruby color. Elegant nose with floral notes over a background of fresh red berries. Full mouth with depth and fine tannins.
