HARVEST: Hand harvested in the second week of September in 40lb. boxes, transported to the winery to begin processing within 2 hours.

FERMENTATION: Low temperature fermentation at 57-61º F for 15 days. 

TASTING NOTES: Flavors of stone fruit and almonds with citrus peel notes. Fresh in the mouth with good balance and a pleasant finish. 

FOOD PAIRINGS: Seafood, salads and cheese.
