FARMING PRACTICES: Certified biodynamic by Demeter. Dry farmed. No chemicals used (pesticides, fertilizers, additives, etc). Nocturnal harvest by hand to prevent oxidation.
VINIFICATION: Spontaneous, temperature controlled fermentation with native yeasts to preserve primary aromas. Minimally fined or filtered. Sulfites ≤50 mg/L.
TASTING NOTES: Delicate, fine, white flower aromas develop in the glass, white fruit persists in the mouth.
