FARMING: Organic with clover cover crop; double guyot pruning; hand harvested into 40 lb cases third week of March 2015
WINEMAKING: Whole grape cold maceration for 5 days. Fermentation with native yeasts on the skins in concrete eggs with 3 daily punch-downs at controlled temperatures. 30 day malolactic fermentation with native bacteria in 2,000 liter second use oak foudres.
AGING: 16 months in same oak foudres with additional month in concrete eggs
BOTTLING: November 22nd, 2016. 157 cases made.
TASTING NOTES: A bright, purplish red color. Fragrant aromas of fresh black plums, cherries, blackberries, violets and wild herbs, with layered, deeper notes of chocolate and cloves. Full bodied and expressive in the mouth. Good structure and balance with fine-grained tannins and a long finish.
