SOIL: Volcanic, well drained

FARMING PRACTICES: Dry farmed. 

VINIFICATION: Fermentation with native yeasts

TASTING NOTES: Pure, high-toned red fruit with bright acidity and a streak of well integrated tannins. Broad, detailed red fruit palate with a long finish. 

PAIRINGS: Roast chicken or pork with herbs and fennel, goat cheese and lamb.
