VARIETALS: 100% Cabernet Sauvignon
GROWING CONDITIONS: Continental climate with low humidity. Calcareous clay soil type with low organic matter. Averaging altitude of 2500ft.
HARVEST: Hand harvested into 40lbs boxes, transported to the winery to begin processing within 2 hours.
VINIFICATION: Controlled fermentation at 82º F for 15 days.
TASTING NOTES: Bright cherry in the glass. Rich aromas of raspberry and plum with spicy undertones. Full bodied red fruit flavors with balsamic notes, well balanced tannins and a long finish.
FOOD PARINGS: Beef, lamb, chicken, or mushroom dishes.
