GROWING CONDITIONS: Continental climate with low humidity. Clay soils with granitic and shale origin.
HARVEST: Hand harvested into 40lbs boxes, transported to the winery to begin processing within 2 hours.
VINIFICATION: Controlled fermentation at 77º F for 15 days.
TASTING NOTES: Cherry color, shading into purple. Aromas of blackberry, violet and licorice that continue on the palate. Well balanced with soft tannins and a long finish.
FOOD PARINGS: Chicken, tomato based dishes and cheese.
