Santiago Sherries are produced by a small co-operative that brings together four producers in the Sherry Triangle. The coop is committed to respecting the vineyards as well as the men and women who have worked the lands in the Cádiz since time immemorial.
The winery is committed to using the most traditional methods, environmentally friendly techniques and supporting grape growers. Most of the grapes are hand harvested with low yields. Santiago is “IP” certified by the EU, and is making its way to the next step, organic.
In numbers, the winery brings together 1,200 small grape-growers, which means close to 20 percent of all vineyards in the Sherry Triangle. Having sold wine to bigger houses for 50 years, in 2008 the coop decided to market its own wines.
