IN THE VINEYARD:
VINEYARD: Located on a hillside overlooking the small village of Vernou-sur-Brenne, located directly east of the village of Vouvray.
VARIETALS: Chenin Blanc 100%
FARMING: Certified organic.
PLOUGHING: The soil cover is maintained. rows grassed; biodiversity encouraged. Annual ploughing.
SOILS: Mostly limestone with some plots with clay and flint, very mineral
WEATHER: Continental Weather
VINES: 20 - 45 year old vines. Traditional Trellis.
HARVEST: Entirely made by hand in small crates on the 2nd half of September and early October.
IN THE CELLAR:
FERMENTATION: With the native yeasts from the Estate in Small stainless steel tanks for 3 weeks.
TREATMENTS: No chaptalization or acidification at all. The idea is to stay natural as much as possible.
PRESSING: Slow at low pressure.
LEES: A minimum of 3 months lees contact
OAK BARREL AGING: No.
FINING/ FILTRATION: The wine is allowed to settle naturally by gravity and is only minimally fined or filtered. Vegan.
STYLE: Dry Still

PHILOSOPHY: We believe that the best wines are born in the vineyard.
TASTING NOTES: Straw yellow color with aromas of white flowers and anise. Bright and crisp in the mouth with citrus notes.
