VINEYARDS: In Civitella in Val di Chiana and Castiglion Fibocchi.

VARIETALS: Sangiovese 100%

FARMING: Dry farming. Organic

PLOUGHING: Rows grassed

SOILS: Calcareous

WEATHER: Mediterranean

VINES: Traditional Trellis. 5000 vines/ Ha. 6 tons/Ha

HARVEST: Entirely made by hand in small crates on the 2nd half of September

IN THE CELLAR:

FERMENTATION: With the native yeasts from the Estate in Small concrete tanks

TREATMENTS: No chaptalization and acidification at all. The idea is to stay natural as much as possible.

PRESSING: Traditional.

MALOLACTIC: Yes.

OAK BARREL AGING: Yes.

FINING/ FILTRATION: The wine is allowed to settle naturally by gravity and is only minimally fined or filtered. All work in the winery is done with gravity, without the use of pipes or pumps.

SULFITES: Minimum

WINEMAKER: Fabrizio Ciufoli

PHILOSOPHY: We believe that the best wines are born in the vineyard.

TASTING NOTES: Beautiful ruby red. Fresh red fruit aromas on the nose. Elegant and smooth on the palate.
