De Ursua still uses an ancient recipe to make its vermouths. Following a basque tradition dating back to the 1900s, the base wine for the vermouth sees an infusion of local bitter herbs. The +20 herbs present, are part of the original recipe and are infused at ambient temperatures over an extended period to concentrate the botanicals. Most of the botanicals are locally sourced or foraged and include wormwood, elderflower,knapweed,fennel and cammomile . The wine is finally fortified with liquor before bottling. The Vermouths retains the typical bitter taste of Vermouths produced in the beginning of the century. While delicious in a mixed drink, De Ursua Vermouths are traditionally enjoyed neat, on ice or with soda. Depending on the type of wine, they are customarily served either with an orange slice, lemon twist or olive for garnish.
