APPELLATION: Columbia Valley (88% Walla Walla Valley)

VARIETAL: Cabernet Sauvignon

FARMING: Certified Sustainable

PLOUGHING: In row cultivation for weed control

SOILS: Wind blown Loess over fractured basalt

WEATHER: Continental Weather

VINES: 8 to 15 year old vines. Traditional “VSP” (vertical shoot positioning) trellising.

HARVEST: Entirely picked by hand in 1/2 ton bins beginning October 10th and 25th.

FERMENTATION: With the native yeasts from the Estate in Small stainless steel tanks

WINEMAKING: Cap management by a mix of pumpover and manual punchdown. Spontaneous and complete malolactic.

BARREL AGING: 100% barrel aged in a mix of French and American oak, 25% new; aged for 15 months

FINING/ FILTRATION: The wine is allowed to settle naturally by gravity and is only minimally filtered.

CHEMISTRY: Alc. 14.1%. 5.8 g/L Total Acidity  3.68 PH

SULFUR: Minimum

WINEMAKER: John Grochau

PHILOSOPHY: If you have a good vineyard site that is managed well, winemaking is simply guiding the grapes to wine in a safe manner.

TASTING NOTES: Aromas of red fruit and cassis with floral and spice hints. Rich, smooth, and vibrant. Pairs great with roasted or grilled red meat and pizza.
