IN THE VINEYARD:

APPELLATION: Cheverny

VINEYARDS: Close to the village of Vineuil on a hill overlooking the Loire River.

VARIETAL: 80% Sauvignon 20% Chardonnay

FARMING: Sustainable farming with no fertilizer and biodiversity. Terra Vitis Certified

PLOUGHING: The soil cover is maintained.

SOILS: Sandstone and chalk-clay

WEATHER: Continental Weather

VINES: 20 year old vines. Traditional Trellis. 5,555 vines per Ha. 60 hl per Ha.

HARVEST: By hand in small crates around the middle part of September.

IN THE CELLAR:

FERMENTATION: With the native yeasts from the Estate in Small stainless steel tanks

TREATMENTS: No chaptalization and acidification at all. The idea is to stay natural as much as possible.

PRESSING: Traditional.

MALOLACTIC: Spontaneous, if any.

LEES: Approx. 4 months lees contact

OAK BARREL AGING: No.

FINING/ FILTRATION: The wine is allowed to settle naturally by gravity and is only minimally fined or filtered.

SULFUR: Minimum

PHILOSOPHY: We believe that the best wines are born in the vineyard.

TASTING NOTES: Bright yellow color with citrus aromas of grapefruits, white flowers, and an expression nose of black currant. Perfectly balanced structure of sweetness and acidity.
