VINEYARD: 12 acres of limestone, surrounded by garrigue scrublands
FARMING PRACTICES: Certified biodynamic by Demeter. Dry farmed. No chemicals used (pesticides, fertilizers, additives, etc). Nocturnal harvest by hand to prevent oxidation.
VINIFICATION: Spontaneous, temperature controlled fermentation with native yeasts to preserve primary aromas. Aged 4 months in concrete tanks. Minimally fined or filtered. Sulfites ≤50 mg/L.
