IN THE VINEYARD:
APPELLATION: Sicilia DOC
VINEYARDS: Steep mountain vineyards around the tiny village of Camporeale
VARIETALS: Nero D'Avola 100%
FARMING: Organic Certified.
PLOUGHING: The soil cover is maintained. Annual ploughing.
SOILS: 2 plots, one at sea level, with limestone rich soils; the other at 1,000 feet altitude with clay and gravel soil.
WEATHER: Mediterranean
VINES: 40 year old vines. Traditional Trellis.
HARVEST: Entirely made by hand in small crates on the first 2 weeks of September.
IN THE CELLAR:
FERMENTATION: With the native yeasts from the Estate in small stainless steel tanks. All work done by gravity without pipes or pumps.
TREATMENTS: No chaptalization and acidification at all. The idea is to stay natural as much as possible.
PRESSING: Traditional.
MALOLACTIC: Yes.
OAK BARREL AGING: No.
FINING/ FILTRATION: The wine is allowed to settle naturally by gravity and is only minimally fined or filtered.
SULFITES: Less than 35 ppm
WINEMAKER: Antonino Vilardi
PHILOSOPHY: We believe that the best wines are born in the vineyard.
TASTING NOTES: Ruby red with aromas of red berries, currants. Silky and smooth in the mouth with continued berry flavors. Fine, balanced tannins with a long finish.
