VINEYARDS: Steep mountain vineyards around the tiny village of Camporeale
VARIETAL: Grillo 100%
FARMING: Organic Certified.
PLOUGHING: The soil cover is maintained. Annual ploughing.
SOILS: 1,000 feet altitude with brown limestone soil, northern exposure
WEATHER: Mediterranean
VINES: 10 year old vines. Traditional Trellis.
HARVEST: Entirely made by hand in small crates in late August to early September.
IN THE CELLAR:
FERMENTATION: With the native yeasts from the Estate in small stainless steel tanks. All work done by gravity without pipes or pumps.
TREATMENTS: No chaptalization and acidification at all. The idea is to stay natural as much as possible.
PRESSING: Traditional.
MALOLACTIC: Spontaneous, if any.
LEES CONTACT: 6 months
OAK BARREL AGING: No.
FINING/ FILTRATION: The wine is allowed to settle naturally by gravity and is only minimally fined or filtered.
SULFITES: Less than 60 ppm

PHILOSOPHY: We believe that the best wines are born in the vineyard
TASTING NOTES: Straw yellow in the glass, with golden reflections. Delicate aromas of grass and citrus notes. In the mouth, generous, elegant and well balanced with a long finish.
