IN THE VINEYARD:
APPELLATION: Rheinhessen
VINEYARD: On the Kloppberg, the highest hill in the region.
VARIETALS: Riesling 100%
FARMING: Organic and Biodynamic Certified by Demeter. Dry farmed; rows grassed over. No chemicals used (pesticides, fertilizers, additives, etc).
PLOUGHING: The soil cover is maintained. Annual ploughing.
SOILS: Limestone and loess
WEATHER: Continental. Long, dry, maturation period with large fluctuations between day and night temperatures; microclimate leads to fresh, elegant and highly aromatic grapes
VINES: 25 year old vines. Traditional Trellis.
HARVEST: Entirely made by hand in small crates on the 2nd half of September and early October.
IN THE CELLAR:
FERMENTATION: Spontaneous, with the native yeasts from the Estate in small stainless steel tanks. The secondary fermentation occurs naturally in the bottle with no sugar added. All winery work done by gravity without any pumps or pipes.
TREATMENTS: No chaptalization and acidification at all. The idea is to stay natural as much as possible.
PRESSING: Traditional. Whole grapes, without destemming.
MALOLACTIC: Spontaneous, if any.
LEES: Approx. 4 months lees contact
OAK BARREL AGING: No.
STYLE: Dry
FINING/ FILTRATION: The wine is allowed to settle naturally by gravity and is only minimally filtered. No fining. Certified Vegan.
SULFITES: Below 35 ppm
WINEMAKER: Andreas Roll.
PHILOSOPHY: 100% Grapes and nothing else!.
TASTING NOTES: Fine, lively bubbles with layered flavors of stone fruit, green apple, pear and a hint of brioche, tied together with bright, balanced acidity.
