VARIETAL: 100% Chardonnay

VINEYARD: Small slope in the village of Chasselas de Bourgogne, 20-50 year old vines years, situated on Southwest facing slopes of limestone, clay and fossil rocks. A very nice parcel bordering the Pouilly Fuissé appellation.

WINEMAKING:Fermentation takes place in stainless steel and aging is in oak casks for a minimum of 9 months depending upon the vintage. New oak barrels are not used for this wine; the newest barrels have been used three times. The goal is to bring roundness to the wine without a taste of oak.

TASTING NOTES: This is a full bodies wine with aromas of apricots and citrus fruits. Its color is a very pretty, lightly golden yellow. It is a dry wine without residual sugar. Good minerality and smooth with fine balance.

PAIRINGS: Fish, risotto and cheese (goat, blue and Comté are a few good ideas).
